A new bakery, with a familiar owner, will soon be taking flight in Louisville.

Oddbird Bakery, a new concept from Quills Coffee, is expected to open soon at 1201 Bardstown Road in the Highlands.

The building formerly occupied by Steel City Pops now sports yellow signs hanging in the front windows. The signs say, “Coming soon. Oddbird Bakery.”

Quills, which has seven locations in Louisville and one in Indianapolis, took over the space to act as the home base for the coffee shop’s new food operation. After years of carrying pastries and baked goods from other businesses, patrons will now find croissants, muffins and other breakfast items made by Oddbird at all Quills locations.

An exact opening date hasn’t been announced for the bakery on Bardstown Road, but a post on the eatery’s Instagram hints that it will open this summer.

“Early Bird is the natural next step for Quills in its mission to create community through delicious coffee and beautiful spaces,” reads another Instagram post from 2023. “The bakery will provide tasty treats and delicious savory options so Quills fans can have the best experience possible every time they visit one of our cafes.”
