Making fresh linguine from scratch with this pasta machine is easy

Fresh pasta has a signature bite, all while being tender and luxurious. And pasta isn’t as hard to make as you think — especially with the right pasta machine.

If it still sounds complicated, it’s not. Here’s exactly how to make fresh linguine with the Imperia Pasta Machine.

Ingredients

  • 2.5 cups semolina or flour

  • 1 tablespoon olive oil

  • pinch of salt

  • 4 large eggs

Instructions

  1. Mix all of the ingredients in a food processor until a grainy dough forms.

  2. Use your hands to knead the dough into a ball.

  3. Wrap dough tightly with plastic wrap and set aside to rest for 30 minutes.

  4. On a floured surface, roll the dough into a thin layer — about a quarter-inch thick.

  5. Roll the dough through the machine to create a thin, even layer. You can do this once or twice, if needed.

  6. Then, switch the pasta roller to create fettuccine or linguine, and carefully feed the sheet of pasta dough through it to cut noodles.

  7. To cook, boil your pasta until it’s tender. (Note: It will take less time than dried pasta.) Then, prepare it however you’d like.

The whole process takes less than an hour — and the results are worth every minute.
