Make this easy and sophisticated golden peach slushy

The season of renewal calls for a lighter and brighter palette. With most people at home due to the pandemic, now is a great time to spruce up the old cocktail skills. This golden peach slushy is super simple but elevated enough to impress guests — or, you know, your friends over Zoom.

This bubbly, peachy beverage is the perfect easy-breezy, warm-weather drink to enjoy while longingly gazing out the window, longingly gazing on the balcony or longingly gazing in the garden.

Ingredients:

  • 1 pint peach sorbet

  • 1 bottle sparkling rosé or other sparkling variety

  • Fresh thyme for garnish

  • Gold leaf for garnish

  • Peach slices for garnish

First, place a small scoop of sorbet into a champagne glass. Next, pour sparkling rosé over the ice cream scoop until the glass is full. Finally, garnish with peach slices, thyme and the gold leaf.
