Starbucks is a morning savior for many. And while it’s mainly celebrated for waking people up with its espresso drinks, its food is not to be overlooked.

One breakfast favorite for eating on the go is the sous vide egg bites. The egg bites come in a few varieties — egg white and roasted red pepper, bacon and gruyère and ham, cheddar and peppers — and are cooked using the French sous vide technique.

In basic terms, the sous vide technique is when you place food in an airtight, vacuum-sealed bag and then cook it in temperature-controlled water. This prevents food from overcooking (thanks to the constant temperature control) and allows it to cool evenly through, though it can take much longer than other methods.

While the technique has also been used in high-end restaurants to prepare tender meats for decades, there are tools for trying sous vide cooking at home, like this Sous Vide Immersion Circulator by the company behind Instant Pot. An immersion circulator will typically run you around $80-90, though they can go for up to $300.

So, you can make copycat egg bites using sous vide, which will take over 30 minutes — or you can use a $30 tool which takes less time and achieves similar and equally delicious results.

Now, here’s how to make Starbucks egg bites

To make egg bites similar to Starbucks’, you’ll need to mix 5 eggs with 1/4 cup of cottage cheese and a pinch of salt and pepper and blend until light and frothy. Then, mix in the the following ingredients:

For the egg white and roasted red pepper bites: shredded Monterey Jack cheese, spinach and fire-roasted red peppers (you can buy them in a jar or can and rinse before using, or toss red peppers under your broiler for a minute or so)

For the bacon and gruyère bites: gruyère cheese, Monterey Jack cheese and applewood-smoked bacon

For the ham, cheddar and peppers bites: diced ham, roasted red peppers, roasted green peppers, cheddar cheese and Monterey Jack cheese

Once all the ingredients are mixed together, pour the egg mixture into the silicone egg cups in the Dash Egg Bites Maker and cook. Keep in mind, these egg bites will be slightly bigger than the Starbucks version, but you can make the bites smaller or bigger depending on how much mixture you prepare and add to the cups.
