You have to try this berry Belgian waffle cake

This cake is made in a waffle pan! Stack your waffles up with layers of strawberry cream for the ultimate dessert.

Ingredients

  • 3 cups Belgian waffle mix

  • cooking spray

  • 2 cups heavy cream

  • 8 ounces mascarpone cheese

  • 1 cup confectioners' sugar

  • 1/2 cup strawberry purée

  • 4 cups strawberries

  • 1/2 cup granola

Instructions

  1. Prepare Belgian waffle mix as instructed on package while you heat a waffle iron with cooking spray.

  2. Add approximately one cup of batter to the waffle iron and cook for 3 minutes or until golden brown. One done, set aside to cool on a wire rack and repeat with remaining batter.

  3. While waffles cool, beat the heavy cream until soft peaks form. Then, add in the mascarpone and sugar and beat until stiff peaks form. Fold in strawberry purée with a spatula.

  4. On a cake stand or serving platter, spread cream across one waffle and top with strawberries. Repeat with the remaining waffles and cream, stacking one on top of the other to form a cake.

  5. Garnish the cake with strawberries and granola on top and serve!
