Baked By Melissa launches vegan cupcake collection for the first time ever

Baked By Melissa may be known for its small, bite-sized cupcakes, but it's grown to become a multimillion-dollar company with 14 store-front locations since it launched in her tiny Manhattan kitchen back in 2008. However, despite these successes, there was one type of customer that Melissa Ben-Ishay, the founder and president of the popular company, wasn't tapping into: vegans.

Although Baked By Melissa currently offers flavors for customers with nut or gluten allergies, vegan dieters have been unable to enjoy the colorful mini desserts the brand has become known for. However, Baked By Melissa's announcement of a vegan box on Thursday is helping to make vegan eaters (sweet) dreams come true.

"We decided to create a vegan cupcake assortment because our customers asked for it and it's also something I am passionate about and have been wanting to do for a while," Ben-Ishay explained to AOL Lifestyle. "I could not be more proud of this product line - they are the best vegan cupcakes I have ever tasted."

Every single detail in the company's signature recipes had to be reevaluated in order to accommodate the new launch.

"The process for creating vegan [cupcakes] was totally different than anything we've done before," she continued. "We had to create entirely new cake, icing, stuffing and topping recipes. How fun is that? This new category is allowing me to work with new ingredients that I love and have not yet used for Baked by Melissa!"

The company is working on new vegan recipes every day (peanut butter is Ben-Ishay's current favorite!) and the line is available for purchase from the company's website or Amazon!
