Add a little bit of magic to your child’s lunchbox with our favorite unicorn-inspired recipes.

Unicorn Toast

Ingredients:

  • white frosting

  • pink or red food coloring

  • purple food coloring

  • blue food coloring

  • black food coloring

  • 1 waffle ice cream cone

  • 2 bread slices

  • 1 marshmallow

Instructions:

  1. Set aside ¼ of the white frosting. Gradually mix pink or red food coloring into roughly 1/4 of the remaining portion of white frosting until it is a desired shade of pink. Repeat with purple, blue and black food coloring, until you have four distinct colors.

  2. Cover bread in white icing on one side.

  3. Add a dollop of purple, blue and pink icing onto the top 1/3 of the toast. Swirl with a spoon to create unicorn mane.

  4. Break off the tip of a waffle cone and nestle into the unicorn mane as a horn.

  5. Cut marshmallows in half and apply to top of bread as ears.

  6. Use a toothpick or piping bag to apply black frosting eyes.

Rainbow Sushi

Ingredients:

  • Cooked sushi rice

  • beet powder

  • turmeric

  • purple cabbage

  • spirulina

  • baking soda

  • nori (sheet seaweed)

  • your pick of colorful vegetables (like bell peppers, cucumber and purple cabbage)

Instructions:

  1. Divide cooked sushi rice evenly into six portions.

  2. To create colors, mix natural food coloring into each portion of rice.

  3. To make red, mix rice with beet powder; for orange, use mixture of beet powder and turmeric; for yellow, mix in turmeric; for green, mix in spirulina; for purple, boil red cabbage in water for 30 minutes and use to cook ½ cup of sushi rice; for blue, mix 3 tablespoons red cabbage water with 1 teaspoon of baking soda and use to cook sushi rice.

  4. Slice vegetables into long strips.

  5. Place sheet of nori onto bamboo sushi roller. Add one stripe of each color of rice until the sheet is filled.

  6. Top rice with sliced vegetables.

  7. Roll up the sushi, wetting the end of the sheet of nori with water to seal. Wet a sharp knife and slice into sushi rolls.

Unicorn Noodles

Ingredients:

  • purple cabbage

  • rice or glass noodles

  • baking soda

  • lemon juice

  • sauce and seasonings of your choice

  • toppings of your choice (try green onions, radishes, carrot strips and/or cucumber strips)

Instructions:

  1. Bring large pot of water to a boil. Boil purple cabbage for 5-10 minutes, until water is deep purple. Turn off the heat and remove cabbage.

  2. Add rice or glass noodles to purple water. Soak until desired purple color, then set 2/3 aside.

  3. Add baking soda to purple water and remaining noodles. Soak until blue.

  4. Divide purple noodles into two equal portions. Squeeze lemon juice over one half of purple noodles and mix until pink. Serve with sauce and toppings of your choice.
