Best Bites: Mini pancake stackers with Nutella and strawberries

Breakfast just got a major upgrade! This week on Best Bites, we're making mini pancake stackers with Nutella and strawberries.

Ingredients

For the pancakes:

  • 2 cups all purpose flour

  • ½ teaspoon salt

  • 1 teaspoon baking soda

  • 2 teaspoons baking powder

  • 3 tablespoons sugar

  • 2 large eggs, lightly beaten

  • 3 cups buttermilk

  • 4 tablespoons unsalted butter, melted, plus ½ teaspoon for griddle

For the toppings:

  • Nutella

  • strawberries

  • confectioners sugar

Instructions

  1. Using a whisk or fork, mix together flour, salt, baking powder, baking soda and sugar in a large bowl.

  2. Add the buttermilk, butter and eggs to the bowl and stir using a whisk or fork. The batter should to be a bit lumpy, not too smooth!

  3. Heat a pan over medium heat and once hot, coat with butter. Add a spoonful of pancake batter onto the hot pan and repeat until you run our of batter. (You will need to cook these in batches.)

  4. Flip when the bottoms become golden brown, around 30 seconds to 1 minute on each side. Once done, remove pancakes from the pan.

  5. Spread Nutella on one side of a mini pancake and stack with another mini pancake—like a Nutella sandwich. Repeat until their stacked about four pancakes high or more and top with strawberries and a sprinkle of powdered sugar. Skewer with a toothpick for serving and enjoy!
