How to make a summer açai bowl in a coconut

Servings: Makes 2 bowls
- 7 ounces frozen açai
- 1 frozen banana
- 1 cup apple juice
- 1 coconut
- 2 tablespoon granola
- 1/2 banana, sliced
- 1/2 cup blueberries
- 2 strawberries, sliced
- 2 tablespoon coconut flakes
- edible flowers
- Blend frozen açai, banana and apple juice in a blender.
- Holding the coconut with one hand over a bowl, firmly (but carefully!) tap it with the back side of a cleaver, mallet or a hammer. Turn as needed, until the shell starts cracking in half. Split the shell and empty the coconut water into the bowl. Discard or save for later.
- Pour the açai mixture into the two coconut bowls and top with granola, banana, blueberries, strawberries, coconut flakes and edible flowers.
