Servings: 2 sandwiches

Ingredients

  • 1 tablespoon butter

  • 1 garlic clove

  • 2 lobster tails, sliced in half lengthwise

  • 1/3 cup mayo

  • 2 tablespoons honey

  • 1/2 teaspoon smoked paprika

  • 1 tablespoon dijon mustard

  • 4 slices brioche bread, toasted

  • 4 butter lettuce leaves

  • 1/2 tomato, sliced

Instructions

  1. Heat skillet over medium heat and add butter to melt. Once completely melted, add garlic clove and lobster tails, tossing to coat. Cook the lobster until it is opaque and bright red, flipping occasionally for about 4-5 minutes.

  2. Make sweet and smoky mayo: Whisk mayo, honey, smoked paprika and dijon mustard together in a small bowl until smooth.

  3. Spread sweet and smoky mayo on one side of toasted brioche bread, then layer with lettuce and two tomato slices. Season with salt and pepper.

  4. Add bacon and lobster tails to sandwich and top with another slice of toasted brioche.
