Over the past few years, cauliflower has quickly gained traction as a solid substitute for carbs in favorite dishes like mac 'n cheese, pizza and fried rice. This is in part due to its neutral flavor. But beyond its ability to completely transform into anything you wish, it also packs a punch of vitamins and nutrients.

Cauliflower contains a healthy dose of vitamin C, vitamin K, potassium, folate and a B vitamin called choline, which helps with brain development. Not only that, but it's loaded with fiber, so it will make you feel full and for a while.
