- 2 tbsp butter
- 2-3 cups fresh corn
- 2 tbsp mayonnaise
- 1 cup heavy cream
- 1 tbsp cornstarch
- 8 oz shredded Monterey jack cheese
- 1 bag tortilla chips
- ¼ cup cotija cheese
- 2 tbsp crema
- 2 tbsp chopped cilantro
- Pinch of cayenne
- 1 fresh lime
- Melt the butter in a pan over medium-high heat. Add the corn and let it cook until the kernels starts to char a bit. Gently stir. Allow the corn to char again before removing the pan from heat. Remove the corn from the pan and pour into a bowl.
- In a separate bowl, mix the cornstarch into the cream. Pour this mixture into the pan and reduce it to a simmer. Add the jack cheese and cook until the cheese is thoroughly melted.
- Place the tortilla chips on a large serving dish, pour on the cheese, top with the corn, cotija, crema cilantro and cayenne! Serve with lime juice and enjoy!
