Best Bites: Mexican street corn nachos

We're celebrating Cinco de Mayo with these delicious and creamy Mexican street corn nachos! Check out the recipe on this week's episode of Best Bites.

Ingredients:

  • 2 tbsp butter

  • 2-3 cups fresh corn

  • 2 tbsp mayonnaise

  • 1 cup heavy cream

  • 1 tbsp cornstarch

  • 8 oz shredded Monterey jack cheese

  • 1 bag tortilla chips

  • ¼ cup cotija cheese

  • 2 tbsp crema

  • 2 tbsp chopped cilantro

  • Pinch of cayenne

  • 1 fresh lime

Recipe:

  1. Melt the butter in a pan over medium-high heat. Add the corn and let it cook until the kernels starts to char a bit. Gently stir. Allow the corn to char again before removing the pan from heat. Remove the corn from the pan and pour into a bowl.

  2. In a separate bowl, mix the cornstarch into the cream. Pour this mixture into the pan and reduce it to a simmer. Add the jack cheese and cook until the cheese is thoroughly melted.

  3. Place the tortilla chips on a large serving dish, pour on the cheese, top with the corn, cotija, crema cilantro and cayenne! Serve with lime juice and enjoy!
