Best Bites: 10-minute white bean parmesan soup
In the mood for a hearty bowl of soup? Try this easy and delicious soup in this week's episode of Best Bites! Made with fresh spinach, juicy tomatoes and protein-packed beans, this dish is perfect for those frigid winter nights.
Ingredients:
1 tbsp olive oil
1 diced
yellow onion
6-8 cloves minced garlic
6 cups vegetable stock
15 oz can diced and drained tomatoes
1 tsp sugar
¾ cup grated parmesan cheese
1 tbsp Italian dried herbs
1 tsp salt
½ tsp pepper
15 oz canned cannellini beans
4 cups spinach
3 tbsp chopped parsley
Recipe:
In a large pot, heat the olive oil over medium-high heat. Add the onion and garlic and saute for a few minutes until the onion is translucent. Pour in the vegetable stock, canned tomatoes, sugar, parmesan cheese, Italian herbs, salt and pepper. Mix ingredient and bring to a boil, allowing mixture to simmer for 5 minutes. Stir in the cannellini beans and spinach. Sprinkle in chopped parsley and simmer for 2 minutes. Serve and enjoy!
