Best Bites: 10-minute white bean parmesan soup

In the mood for a hearty bowl of soup? Try this easy and delicious soup in this week's episode of Best Bites! Made with fresh spinach, juicy tomatoes and protein-packed beans, this dish is perfect for those frigid winter nights.

Ingredients:

  • 1 tbsp olive oil

  • 1 diced

  • yellow onion

  • 6-8 cloves minced garlic

  • 6 cups vegetable stock

  • 15 oz can diced and drained tomatoes

  • 1 tsp sugar

  • ¾ cup grated parmesan cheese

  • 1 tbsp Italian dried herbs

  • 1 tsp salt

  • ½ tsp pepper

  • 15 oz canned cannellini beans

  • 4 cups spinach

  • 3 tbsp chopped parsley

Recipe:

  1. In a large pot, heat the olive oil over medium-high heat. Add the onion and garlic and saute for a few minutes until the onion is translucent. Pour in the vegetable stock, canned tomatoes, sugar, parmesan cheese, Italian herbs, salt and pepper. Mix ingredient and bring to a boil, allowing mixture to simmer for 5 minutes. Stir in the cannellini beans and spinach. Sprinkle in chopped parsley and simmer for 2 minutes. Serve and enjoy!
