Spice up your week with this delicious and nutritious chicken fajita salad, spritzed with lime and chili. Mixed with creamy avocado, hearty chicken and sweet onions, this salad is a great addition to your weeknight lunch or dinner.

3 tbsp of olive oil
1/3 cup of lime juice
1 tbsp of cilantro
2 cloves of garlic
1 tsp brown sugar
3/4 tsp chili flakes
1/2 tsp of cumin
1 tsp of salt
4 chicken thighs
1/2 yellow pepper
1/2 red pepper
4 cups of romaine lettuce
Pour olive oil into a bowl
Mix in lime juice, cilantro and garlic.
Add in brown sugar and chili flakes.
Mix in cumin and salt.
Whisk, whisk, whisk!
Pour half of marinate in separate bowl to save for salad dressing.
Pour over chicken and marinate for 2 hours.
While it's marinating, slice peppers and onions.
Pour oil into pan and fry peppers and onions.
Chop chicken and avocado.
Garnish salad with chicken and vegetables.
Add marinate as dressing.
