Best Bites: Panera's broccoli cheddar soup

This recipe is guaranteed to become your favorite go-to soup on a chilly winter day. Sprinkled with mountains of cheese and served in a hearty bread bowl, this broccoli cheddar soup is perfect for lunch or dinner!
Ingredients
- 1 stick of butter
- 3 cups of chicken broth
- 4 cups of broccoli
- 1 onion
- 1/4 cup of flour
- 2 cups of half-and-half
- 4 7-inch sourdough round loaves
- 1 chopped carrot
- 2 1/2 cups of grated white and cheddar cheese
- 1/4 tsp of Nutmeg
- 2 bay leaves
- Salt and pepper
- Sliced scallions
Directions
- Cut off the top of the bread bowls and hollow out
- Dice onion
- In a pot, melt butter and add onion, flour and chicken broth.
- Stir, stir, stir!
- Add in bay leaves and nutmeg.
- Sprinkle salt and pepper.
- Whisk, whisk, whisk.
- Toss in carrot and broccoli.
- Simmer for 20 minutes.
- Scoop out the bay leaves
- Blend the soup in a blender until smooth.
- Sprinkle 2 cups of grated cheese.
- Whisk, whisk, whisk.
- Pour into bread bowl.
- Garnish with more cheese and sliced scallions.
- Enjoy!
