Best Bites: Spicy Sriracha ramen

Your college noodles just got an upgrade. Heat up your chilly fall afternoons with this homemade Sriracha noodle soup. Made with ginger, spices and ramen noodles, it's guaranteed to make your day so much better!

The recipe is super simple!

Ingredients

  • 1 onion, diced

  • 1 tomato, diced

  • 2 tbsp sesame oil

  • 2 tbsp Sriracha

  • 5 cloves Garlic

  • 1 tbsp ginger

  • 1/2 tsp garlic powder

  • 1/2 tsp celery salt

  • 2 cups water

  • 4 cups vegetable broth

  • 1 tbsp soy sauce

  • Rice vinegar

  • 3 packages of Ramen noodles

  • Scallions

Directions

  1. Dice onions and tomatoes

  2. In a boiling pan, add a dash of sesame oil and a few squirts of Sriracha.

  3. Add in onions and tomatoes.

  4. Stir, stir, stir!

  5. Chop garlic and add too!

  6. Sprinkle in grated ginger.

  7. Add a dash of garlic powder and celery salt.

  8. Pour two cups of water.

  9. Blend the mixture until it's smooth.

  10. Add back into pan.

  11. Bring broth to a simmer.

  12. Pour in vegetable broth and a dash of soy sauce.

  13. Splash in some rice vinegar.

  14. Add in ramen noodles.

  15. Mix, mix, mix!

  16. Chop scallions and add it to the broth.

  17. Stir well.

  18. Season as needed.

  19. Enjoy!
