Chef Wilfrid Hocquet, along with author and nutritionist, Elissa Goodman, have created a special prix fixe NBCF menu available exclusively the month of October.
Elissa's inspiration behind the menu:
"I started off with a list of the most beneficial cancer fighting foods and was determined to include as many of these into the menu as possible, we pulled from my research of the most nutrient dense foods in the world choosing menu ingredients from the “ANDI” Guide (Aggregate Nutrient Density Index). Not only are they extremely high in cancer fighting antioxidants, but these are foods that I turned to when I was going through my diagnosis and I recommend all of my clients try to work in a minimum of 6 servings per day.
We’ve been able to present a prix fixe menu that is maximized by superfoods and focuses on seasonality as well as the principles of Mediterranean diet, which is a high consumption of extra virgin olive oil, fruits, vegetables and fish and elimination of refined carbohydrates. The balance of protein, carbohydrates, sugar, and fiber was also taken into consideration along with portion control. We have also kept it pescatarian and have eliminated gluten and provided an option without dairy."
