Yummy spin on a peanut butter and banana sandwich
Fall is practically here which is honestly one of my favorite seasons. I especially loved it when living in New York City, watching the changing leaves and enjoying the crispness of the autumn air. It has been about a year since I've moved to the south and I now have a greater appreciation for fall as we transition away from hot and humid weather. Thankfully we only saw a little bit of hurricane Hermine this past weekend which left Charleston feeling cooler than usual and was such a welcomed treat.
It's Tuesday and we are getting back into routine which is always hard after a long weekend. Today I am sharing five breakfasts you can make on busy mornings. When it comes to healthy breakfasts, I am all about pairing fiber with protein for staying powder, energy and to help stabilize blood sugars first thing in the morning. It's no surprise that this is one of my favorite combinations of flavors. Peanut butter and banana just go together. The fiber will provide staying power and the carbohydrates will give a boost of energy. Peanut butter is a source of protein and fat which will help with satiety and keep you full until lunchtime.
- 2 pieces of whole grain bread, toasted
- 2 tbsp peanut butter (or nut butter of choice)
- 1 banana, sliced
- 2 tbsp granola (I like Viki's Granola)
