Best Bites: Panera's broccoli cheddar soup

This recipe is guaranteed to become your favorite go-to soup on a chilly winter day. Sprinkled with mountains of cheese and served in a hearty bread bowl, this broccoli cheddar soup is perfect for lunch or dinner!

Ingredients

  • 1 stick of butter

  • 3 cups of chicken broth

  • 4 cups of broccoli

  • 1 onion

  • 1/4 cup of flour

  • 2 cups of half-and-half

  • 4 7-inch sourdough round loaves

  • 1 chopped carrot

  • 2 1/2 cups of grated white and cheddar cheese

  • 1/4 tsp of Nutmeg

  • 2 bay leaves

  • Salt and pepper

  • Sliced scallions

Directions

  1. Cut off the top of the bread bowls and hollow out

  2. Dice onion

  3. In a pot, melt butter and add onion, flour and chicken broth.

  4. Stir, stir, stir!

  5. Add in bay leaves and nutmeg.

  6. Sprinkle salt and pepper.

  7. Whisk, whisk, whisk.

  8. Toss in carrot and broccoli.

  9. Simmer for 20 minutes.

  10. Scoop out the bay leaves

  11. Blend the soup in a blender until smooth.

  12. Sprinkle 2 cups of grated cheese.

  13. Whisk, whisk, whisk.

  14. Pour into bread bowl.

  15. Garnish with more cheese and sliced scallions.

  16. Enjoy!
