Lemon blueberry bread

I am a little bit excited about today's recipe because it happens to involve one of my favorite flavor combinations: blueberry and lemon. There is something so refreshing about lemon and lemon zest in recipes. Though I typically associate it with spring, I can't help but use it year-round. Blueberries of course are the quintessential summer fruit. I'll always remember visiting the Pacific Northwest a few summers ago and picking fresh blueberries at a farm. It seems like it would be a boring experience but it was surprisingly very relaxing. We took home a couple pounds of blueberries that day. Needless to say, I was a happy girl.

This bread is nice and moist and would make a great bite for breakfast, dessert or snack. As usual, I used good-for-you ingredients and yes, the coconut flour craze isn't stopping anytime soon. I love this flour for the natural sweetness it imparts and the fact that it is so high in fiber- great for digestion and elimination.

Lemon: Lemons have powerful antioxidant capacity due to the the citric acid that neutralizes free radicals linked to aging and disease. They also aid in the absorption of nutrients by dissociating them from anti-nutrients like phytates and increasing their bioavailbility in the body.

Blueberries: Blueberries are nutrient standouts because of their enormous antioxidant capacity. Antioxidants are essential for combating free radicals that can damage cellular structures as well as DNA. Besides functioning as potent antioxidants in the body, their phytonutrients also act as anti-inflammatory compounds that boast cardiovascular, cognitive and anti-cancer support.

Lemon Blueberry Bread
Serves: 5
Total time: 5 hours

6 eggs
1 Lemon, juice and zest
4 tbsp coconut oil
1/4 cup honey
2/3 cup coconut flour
1 cup fresh blueberries
1 tsp baking powder

1. Preheat oven to 350 F.
2. To a medium bowl add eggs and beat well. Add remaining wet ingredients: lemon juice, coconut oil and honey. Mix well.
3. Add coconut flour and baking powder to your batter and mix well. Fold in 3/4 of the blueberries.
4. Pour batter into a greased bread pan. Top bread batter with more fresh blueberries and lemon zest.
5. Bake for 40-45 minutes in the oven.
