Double chocolate strawberry waffles
Double chocolate waffles with sliced strawberries to start the week. Chocolate is ALWAYS a good idea. Happy Monday! I'm excited to share these waffles with you today made from completely clean ingredients and that taste indulgent. Coconut has captured my heart in the kitchen when it comes to no-sugar baking. The natural sweetness comes out in baked products which means you don't have to add much (or any) refined sugar.
Now sugar isn't inherently bad. It's our brain's primary energy source. However, added sugars like refined sugars in baked goods are considered empty calories. That is, they give us energy (calories) but with no nutrition. It can also lead to weight management problems, insulin resistance and even progression to diabetes. Fruit on the other hand is not an empty source of sugar since it boasts fiber and a plethora of essential nutrients.
These waffles are a delicious and healthy way to start the day. I always advocate beginning your mornings with a little protein to stabilize blood sugars. These boast protein and fiber for staying power and heart-healthy antioxidants from the seasonal strawberries.
Cocoa: Cocoa powder comes from cocoa beans which are then processed into chocolate liquor. Once most of the fat is removed the remaining paste is dried and powdered. The powder provides fiber, protein and antioxidants that fight against free radicals to combat the aging process.
Strawberries: When it comes to fruit, berries are the antioxidant superstars, namely strawberries. These delicate fruits should be eaten within 2 days of purchase since research shows that nutrient loss occurs thereafter. Not only are they anti-inflammatory, their polyphenols play a major role in helping regulate blood sugar.Choose strawberries that are firm, plump and have a shiny, deep red exterior. Both underripe and overripe strawberries have been show to have lower vitamin C and phytonutrient content compared to their ripe counterparts.
- 1 egg, beaten
- 2 tbsp coconut flour
- 2 tbsp cocoa powder
- 1 tbsp coconut oil
- 1/4 cup water
- 1/2 tsp baking powder
- 1 tbsp maple syrup
- 1/2 cup strawberries, sliced
- 1 tbsp coconut oil
- 1 tbsp cocoa powder
- 1 tsp maple syrup
- Preheat your waffle maker.
- In a medium bowl combine cocoa powder, coconut flour and baking powder.
- In another bowl combine egg, coconut oil, water and maple syrup.
- Combine wet and dry ingredients.
- Pour batter onto a pre-heated waffle maker.
- In a small bowl make your chocolate sauce combining coconut oil, cocoa and maple syrup.
- Serve waffle with chocolate sauce and sliced strawberries.
