🍙 VEGAN SUSHI BURGER 🍙 Loaded with Teriyaki Shredded "Chicken"(not real chicken, the secret ingredient: jackfruit!), avocado, pickled ginger, vegan mayo & red cabbage. This is dedicated to my beautiful sushi loving friend Kim, @brusselsvegan (a.k.a @bestofvegan) in honour of all you do for the vegan community. Popping up on social media this week, the Asian-inspired sandwiches swap the bun for sticky rice -- and the "meat" aspect seems open to interpretation.

While some keep it classic by opting for a beef patty center, others are attempting to keep it on the healthy side by using raw fish or sautéed vegetables. The latter two options make it vegetarian and vegan-friendly, respectively, meaning this is a trend for people of all walks of life.
