Heart-shaped pot pies for V-Day

Comfort food meets Lover's Day, equals a hearty (get it? It's a pun...and on purpose) dinner your family will love. Say to your loved ones, "Hey kids, I love you enough to create heart shaped gluten free pot pies for you on this day of Valentine's" and watch their faces aglow...

If you can't find these heart-shaped ramekins (I found them at Home Goods), you can use the regular ones or even attempt to make these Pot Pie Cupcakes. Do note that depending on what size you use, the serving size will differ but the flavors will still be delicious and will make your Valentine's Day dinner dreams fulfilled. Maybe too much promise in one simple heart shaped gluten free pot pie? I think not.

I used Bob's Red Mill pie crust mix as the flour base and it worked really nicely. However, when I made my veggie pot pie cupcakes years back, I used my all-purpose flour and it was great too. Do note that the crust mix has xanthan gum in it so you might need to add the gum if you are using a different mix of your own and it doesn't already include it. Want to omit the gum? I say give it a go! I've made it without it too and it works as well.

Here is your recipe for Heart Shaped Gluten Free Pot Pies:

Ingredients --

For the Crust:

  • 1½ c. Bob's Red Mill pie crust mix or Cara's All-Purpose Blend
  • ½ tsp. sea salt
  • ½ tsp. baking powder
  • ½ tsp. xanthan gum (omit if using a mix with it already in it)
  • ⅓ c. non-hydrogenated shortening (can sub for coconut oil)
  • ⅓ c. ice water
  • 1 tsp. apple cider vinegar

For the Pot Pie Filling:

  • ¼ onion, chopped
  • ½ tsp. paprika
  • 1 tsp. dried thyme
  • ¼ c. gluten free flour
  • 2 c. vegetable broth
  • ¼ c. nondairy milk
  • 3 carrots, chopped
  • ½ c. frozen peas
  • ½ c. frozen corn
  • 1 can Great Northern beans, rinsed and drained

Full of veggies and beans, it's the perfect gluten free and plant based dinner to fill your family with good-for-you ingredients. Happy Day of Lovers!
