Guacamole is not exactly Irish, but we’re pretty sure St. Patrick would have been into it. And we got the recipe from Goop queen Gwyneth Paltrow, who knows a thing or two about superfoods like avocado.
This recipe is one you’re going to want to bookmark. You can use the novelty of St. Patrick’s Day to introduce this to your kids, and once you get them hooked, you can pull this out again and again. It’s basically a healthier version of mac and cheese with veggies. Nothing to get mad at there.
Parsley, chives, scallions and tarragon bring a beautiful emerald hue to this delicious dish. The chicken can be prepared and marinated the night before, then all you have to do is pop it in the oven at dinnertime.
Tip: Cooking the chicken on a wire rack set inside a baking sheet allows the heat to hit all sides.
