Peanut Butter Chocolate Chip Oatmeal Shortbread Cookies

  • 1 cup oatmeal
  • 4 Tbsp cold butter, cut into cubes
  • ⅓ cup sugar
  • ¼ cup peanut butter
  • ⅓ cup chocolate chip
  1. Preheat oven to 350 degrees.
  2. In a food processor, grind oatmeal until it resembles flour {bigger pieces are okay too}
  3. Add cubed butter, sugar, and peanut butter and process until cookie dough forms. Stir in chocolate chips by hand.
  4. Roll out small balls of cookie dough and flatten them on a lined cookie sheet. Cookies should be about 1 inch in diameter and spaced 1 inch apart from each other {they spread just a bit}
  5. Bake for 12-15 min, until edges are slightly browned and cookies are set in the middle.
