Papaya and Greek Yogurt Smoothie

I had this a few minutes ago for breakfast, and it was so tasty that I preempted the beautiful cake I had planned to post and used this one instead.

It was the perfect post-run breakfast.

This is my first adventure using papaya personally. They are kind of expensive, but different and fun – the kind of fruit that is just a great flavor and lends itself well to drinks – boozy or otherwise. Since it is not even 8:30 yet, this is an "otherwise.

The one we bought was about a foot long, but it was very easy to slice and I just used a spoon to scoop the fruit out. It is pretty soft when ripe – more so than say, a cantaloupe.

Here's what you need for two 10 oz-ish servings of smoothie:

Serving Size: 2

Ingredients:

  • ½ large papaya's fruit

  • ½ cup cranberry 100% juice blend (we used cran-grape)

  • 2 Tbsp lime juice

  • 2 cup ice

  • ¾ cup Greek yogurt

Directions:

  1. Add all ingredients to your blender, making sure the ice goes in last. Use the pulse function to puree – this should take less than a minute! Helloooo healthy breakfast!
