Omelette Sandwich

Serving Size: 1

Ingredients:

  • 1 tsp oil

  • 1 link sausage, about 2oz, thinly sliced

  • ½ red pepper, diced

  • 1 tsp oil

  • 2 eggs, beaten

  • ¼ tsp salt

  • ⅛ tsp pepper

  • 2 Tbsp shredded cheddar

  • 2 inch section cucumber, thinly sliced

  • 2 slices bread


Directions:

  1. Heat up a teaspoon of oil on medium heat. Stir fry sausage and diced red peppers until peppers are cooked but not soft. Remove everything from the pan.

  2. Heat up another teaspoon of oil on low. Whisk salt and pepper into the beaten eggs, and then pour onto the heated oil. Let the eggs cook enough so that the bottom is solid but the top is a little runny still.

  3. Spoon sausage and peppers into the middle of the omelette and sprinkle shredded cheddar on top. Fold up the four sides of the omelette.

  4. Transfer omelette onto a slice of bread and create a sandwich. Toast sandwich on both sides in the pan.

  5. When the sandwich is well-toasted, add thinly sliced cucumbers into the sandwich {I like my cucumbers cold and crisp inside a hot sandwich!}. Slice sandwich in half, wrap everything in foil, and eat while running out the door.
