I love Chai Lattes, but rarely order them out because they're typically made with way over-sweetened concentrate. I omitted sugar from the tea – because I knew I was ultimately going to load my mug up with marshmallows – and used a blend of coconut milk and coconut "Nog" for the base. I actually put the milk in the blender to make it foamy and that seemed to work just as well as any fancy latte machine would have.

It ended up being a festive treat that was extremely easy to execute!

Ingredients
  • 2­inch piece of fresh ginger, cut into thin rounds
  • 2 cinnamon sticks
  • 2 teaspoons whole black peppercorns
  • 10 whole cloves
  • 6 cardamom pods
  • 6 cups water
  • 6 bags of black tea
  • 2 cups almond milk OR coconut milk OR coconut milk eggnog, such as So Delicious brand {Or a mix : ) I used 1
  • cup coconut milk and 1 cup coconut milk eggnog.}
Instructions
  1. Place the ginger, spices, and water in a large saucepan over high­heat. Bring to a boil. Once boiling, reduce the heat to medium, and continue to simmer for approximately 10 minutes.
  2. Remove the pan from the stove, and add in the tea bags, allowing them to steep for at least 5 minutes.
  3. Discard the tea bags and return the tea back to the stovetop, with the milk of your choice added in. Cook over high heat, just until the mixture is hot.
  4. Strain and serve with marshmallows or rock candy
