This acclaimed Hunterdon County restaurant just celebrated 20 years in business

From Flemington's sleepy past to its now-blossoming downtown food scene, Matt's Red Rooster Grill in the Hunterdon County seat has seen it all.

The upscale restaurant in a Victorian home just celebrated its 20th anniversary with a proclamation given by the Hunterdon County Commissioners.

Owner Matt McPherson spends his days (and nights) in the kitchen creating contemporary American fare using locally-sourced ingredients in an everchanging menu.

Options on the menu include Snake River Farms American wagyu ribeye with bourbon green peppercorn demiglace; Griggstown Farm chicken paillard with Parmesan, garlic, spinach and sundried tomato cream; and Griggstown Farm deviled eggs with applewood-smoked dry-aged bacon, smoked paprika, whipped yolk and honey chili aioli.

One of the most acclaimed restaurants in the borough, Matt's Red Rooster Grill is also a center for giving back. The restaurant has assisted over 100 charities and schools, and McPherson is on the board of the Hunterdon County Polytech Arts Program, and part of the Flemington Raritan Business Association.

Before opening Matt's Red Rooster Grill, McPherson worked at Hamilton’s Grill Room in Lambertville, and Sea Grill in Rockefeller Center. After graduating from Hunterdon County Polytech, he attended the Culinary Institute of America.
