As a kid, I never screamed “pizza!” when someone asked about my favorite food. But as an adult? I’ll say it time and time again. Pizza gives me the opportunity to be playful and get creative in the kitchen, often combining more than just the traditional toppings.

Being a pizza aficionado, I often make big batches of yeasted homemade pizza dough to keep my freezer stash going. I love to host pizza parties with friends and family in my yard, allowing them to get just as creative with toppings before firing their creations in an outdoor pizza oven.

I recently started making changes to prioritize more protein in my diet, and I stumbled upon several Instagram reels and TikTok videos about Greek yogurt pizza dough. As someone who always makes a traditional dough with active dry yeast, I was skeptical to say the least. It didn’t seem possible to mix together flour and yogurt and achieve a lovely crust.

I’m so glad I tried it, and I’m so glad I was wrong. Now, I make this easy pizza dough on repeat at least once a week. It’s so simple to whip up in minutes, requiring no pre-planning. It offers a base for a personal-size pizza that’s high in protein, plus the opportunity to either get creative with toppings or keep things simple.

Just 3 Magic Ingredients

This dough comes together with a mixture of all-purpose flour, baking powder, and plain Greek yogurt. It’s important to note that this isn’t going to produce a typical, stretchy pizza dough. Instead, it’s a soft, chewy dough that is ideal for dressing up with your favorite toppings, and you can make it quickly anytime a pizza craving strikes.

In traditional yeasted pizza dough, the activated yeast feeds on sugar in the dough and releases carbon dioxide. This process is called fermentation. This quick and easy pizza dough skips the fermentation process, harnessing the power of the byproducts in the yogurt which work with the leavening agent to produce a wonderful texture.



Tip

For this recipe, it’s best to use any type of plain Greek yogurt, rather than Greek-style yogurt. I always use Fage Nonfat Greek Yogurt, but reduced fat or full fat will work as well.

How to Make My 3-Ingredient Pizza Dough

To make one pizza, you’ll need:

  • 1 cup (136g) all-purpose flour

  • 1 teaspoon baking powder

  • 3/4 cup Greek yogurt

Start by preheating the oven to 425°F. Line a baking sheet with parchment paper.

In a mixing bowl, combine the flour, baking powder, and Greek yogurt. Mix with a spatula until shaggy clumps begin to form. Continue to mix and knead the dough with the spatula, and then your hands, until it comes together, ultimately forming a smooth ball of dough.

Transfer the dough to a floured surface or parchment paper. Use your hands or a lightly floured rolling pin to flatten and shape the dough into a circle. Roll it out to your desired thickness. Transfer the pizza dough to the prepared baking sheet.

Dress up the dough with your favorite sauce and toppings. If you prefer a crispier crust, bake the dough on its own for 5 minutes before topping and putting it back in the oven to finish baking. Bake the pizza for 10 to 20 minutes until it has slightly puffed up, the edges are starting to turn brown, and the cheese has melted. If you don’t pre-bake, you will have a soft, tender crust.

Once baked, remove the baking sheet from the oven and allow the pizza to rest for 5 minutes before slicing and serving.

Tips for Making 3-Ingredient Pizza Dough

  • Manage the Moisture: If you find the pizza dough is too wet or sticky while kneading, add small amounts of flour to make it easier to work with. Alternatively, if it seems too dry while kneading, wet your hands to add a splash of moisture.

  • Don’t Go Too Heavy on Toppings: This tip is standard for any pizza making, no matter the dough. The more toppings, the heavier the pizza. Make a tasty pizza, but avoid overloading it so the crust can bake properly.

  • Pizza for a Crowd: This recipe makes one personal-sized pizza, but it can easily be doubled or tripled as needed. Multiply the amount of ingredients for how many servings you need, and mix a larger amount of dough. Once it’s kneaded, cut the dough into equal parts. This would be a fun activity to get kids involved in making dough and topping their own pizza.

Upgrade the Dough

In its simplest form, this dough only requires three ingredients. However, as I’ve continued to make it so frequently, I’ve learned just how versatile it is.

Part Whole Wheat: You can absolutely use all-purpose flour to make this dough, but I’ve experimented with a half-and-half mixture of whole wheat and all-purpose and love it. It makes for a heartier pizza with more flavor.

Spice it Up: There’s no seasonings in this simple dough recipe, but there can (and should!) be. I love to add in garlic salt, along with an Italian seasoning mixture, to maximize flavor. You could try it with onion powder, infused salts, red chili pepper flakes, and more.
