I have had this recipe for Vanilla Ice Cream Popsicles with Roasted Strawberry Swirls on my mind all summer, and every time I ventured out to pick up the ingredients, I would forget the ice cream. Towards the middle of July, the fine folks at Tillamook surprised us with a package of ice cream, and their timing was perfect as we were having a heatwave.
I decided to play around with the Old Fashioned Vanilla a bit by using some of it to make these popsicles. Originally, I was going to make an orangesicle, but then decided to roast summer time strawberries. The caramelized strawberries are a dream when mixed with this creamy vanilla ice cream, and they really make the vanilla bean pop.
Ingredients
- 4 cup Tillamook Old Fashioned Vanilla Ice Cream, room temperature
- roasted strawberry
Directions
- Place the ice cream into a large mixing bowl and soften with a spatula.
- Fold in the strawberries.
- Place the ice cream mixture into popsicle molds, and place place in the freezer.
- Let freeze overnight.
- Serve.
- Lick.
