For Father's Day, bartender St. John Frizell, owner of Brooklyn restaurant Fort Defiance and father of a one year-old, suggests spirituous drinks whose qualities change slightly as ice fades into the booze (and, we might add, cocktails that pair well with barbeque). Here are three of Frizell's favorite drinks for dads.

Whiskey Smash

"This brilliant cocktail was invented by Dale Degroff and served to great effect at the Pegu Club, where I tended bar," says Frizell. "DeGroff uses Maker's; I prefer it with rye."

2 oz. rye whiskey or bourbon
3 lemon wedges
1 oz. simple syrup (made by mixing equal parts sugar and water)
2 mint sprigs

Add the whiskey, lemon, simple syrup, and one mint sprig to a cocktail shaker. Add ice, and shake. Strain over ice into a rocks glass, and garnish with the remaining mint sprig.

Note: If your dad likes his drinks less sweet, start with a little less simple syrup. You can always add more.

Manhattan (on the Rocks)

"This was my grandfather's drink," says Frizell. "It was the first drink I learned how to make as a kid."

2 oz. rye whiskey
1 oz. sweet vermouth
2 dashes Angostura bitters

Add all ingredients over ice in a rocks glass, and stir. Garnish with a good maraschino cherry.

The Godfather

"My father drinks these," says Frizell. "It's full-flavored, and not frivolous."

2 oz. blended Scotch whiskey
1 oz. (or less) amaretto

Add both ingredients over ice in a rocks glass, and stir. Garnish with a good maraschino cherry, if you like.

Note: Don't skimp on the kind of Scotch you use here. There's no need to use a single malt, but use a good blended whisky, like White Horse or Famous Grouse. Also, go easy on the amaretto--if you know your dad, you know how sweet he likes his drinks, so start with 1/2 oz. amaretto and add up to 1/2 oz. more if you think it's needed.

Dads: You've made it through dirty diapers, high-pitched whining, astronomical school tuitions, and emotional walks down the wedding aisle. So take a load off.

Here to help is bartender St. John Frizell, owner of Brooklyn restaurant Fort Defiance and Daddy to a one year-old.

"Father's Day is a time to sit in a wing chair and think about your life as a father. And accept gifts from your children," he says, adding that "on the rocks" is the way to go for the occasion. "This is Dad's time to relax, not throw back a Martini."
