11 easy weeknight skillet dishes that will save your life

1. Polenta with meat sauce

This simple skillet supper, which cooks up quick and easy in one skillet, is a flavor-packed weeknight alternative to lasagna.

2. Giant skillet sticky bun

This sticky bun could pass as a cake for a casual family dinner. It’s super fun to make, so if you have kids, make sure to get them involved! Tip: Use store-bought pizza dough to save time!

3. Petite filet stroganoff

This delicious meal really feels like a treat, though it’s not particularly difficult to make. This would be perfect for a Sunday night family dinner. The meat is cooked in a skillet, while the noodles are cooked separately, but everything ends up back in the skillet to get “married” together.

4. Giant skillet chocolate chip cookie

This is another fun one to make with kids, and wait until you see the look on their face when they see the giant cookie! It couldn’t be easier, since the batter mixes right up in the pan you’re cooking it in.

5. Skillet chicken with hot & sweet peppers

This skillet meal features crispy chicken thighs and robust Italian sausage (or chorizo) that is cooked with sautéed onions and peppers. Delish!

6. Sausage and butternut squash skillet supper

This flavorful meal is a simple combo of Italian sausage and nutrient-dense butternut squash that is served over toasted bread – how easy could that be?

8. Giant skillet peanut butter pretzel brownie

brownie with peanut butter and pretzels? It’s a salty-sweet dream! Grant uses a store-bought brownie mix, and simply adds peanut butter and pretzels. What could possibly be easier?

8. 15-minute skillet tamale pie

Dinner in 15 minutes? Could it be true? This meal features all the flavors of labor intensive tamales in a mere fraction of the time it usually takes.

9. Skillet-roasted potato ruben melt

For this indulgent skillet dinner, white and sweet potato wedges are crisped in the oven, then removed to the stove top, where the rest of the meal is built. First, drained sauerkraut is layered over the potatoes, followed by a homemade Russian dressing, cubed corned beef, and shredded Emmentaler cheese. Then the whole thing is browned in the oven. Yum!

10. Smoky chicken cacciatore

This delicious skillet meal takes less than an hour to make! First, brown chicken thighs in a cast iron skillet, remove, then add smoky bacon, mushrooms, peppers, garlic and onions and sautee. Add tomato paste, fire-roasted tomatoes and delicious red wine, then return the chicken to the pan and cook through. You can serve right out of the pan, how easy is that?

11. Chicken and rice pilaf skillet supper

This Moroccan-inspired skillet dinner is both delicious and nutritious. Homemade rice pilaf is fleshed out with Meyer lemon, raisins and saffron-infused chicken stock. The pilaf is then topped with poached chicken, toasted almonds, and blanched peas and green beans.
