How To Make Homemade Peeps For Easter

BY COREY BRYAN, EYE OPENER

Peeps are pretty popular this time of year, and if you fancy yourself any kind of baker, you can actually make a similar version for yourself at home. Our Allyn Hoang got the low down from pastry chef and Food Network Challenge Champion Tida Pichakron, who is also the owner of Haute Sweets Patisserie. Check out the recipe below to see how you can whip up a batch of what they call "tweets."

Vanilla Tweets (Peeps)
Bloom:
1/2 Cup Cold Water
4 1/2 tsp. Unflavored Powdered Gelatin

The Syrup:
3/4 Cup Sugar
1/4 Cup Corn Syrup
1/4 Cup Water
1/8 tsp. Salt
1/4 Cup Corn Syrup
2 tsp. Vanilla Extract

For Vanilla Marshmallow:

Whisk together gelatin and cold water, allow to soften for 10 minutes. Mix sugar, 1st amount of corn syrup, water, and salt in sauce pan, cook to 240°F. Microwave bloomed gelatin until melted. Add to kitchen aid bowl along with 2nd amount of corn syrup. Slowly add syrup while whipping, add 2 teaspoons of vanilla extract, whip 5 minutes on medium speed and then whip 5 more minutes on medium high speed until tripled in volume. Pipe into desired shape.
