How to make no-bake pumpkin cheesecake

Thanksgiving dinner can be a stressful meal to prepare -- and that's just the dinner! By the time you've thought about dessert, you may feel too exhausted to actually make it. To avoid getting stressed, you can try this idea from Sabrina Soto. These simple, but oh-so delectable no-bake pumpkin cheesecake cups are easy to make, and will be a hit with the whole family!

To start, toss a block of cream cheese into a bowl. Add brown sugar, cinnamon, nutmeg, ginger, cloves, vanilla and caramel sauce. (Save a little bit of the caramel sauce for later to drizzle on the finished treats!) Feel free to use store-bought caramel sauce if you're not in the mood to make it from scratch. Blend all the ingredients with an electric hand mixer. Once mixed, fold in a can of pumpkin puree and whipped cream. (Don't forget to save some whipped cream to garnish the cheesecakes!)

Once the filling as been made all you have to do is add it to the individual cheesecake cups. First, crumble up some Graham crackers or Biscoff crackers into a glass. (Sabrina uses Biscoff crackers, which she discovered on an airplane!) Spoon in the filling and garnish the cups with whipped cream, and drizzle them with a little bit of caramel sauce.

Ingredients you'll need:
1 block of cream cheese
6 Tbsp brown sugar
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ginger
a pinch of ground cloves
1/2 tsp vanilla extract
2 Tbsp caramel sauce
1 can pumpkin puree
Graham crackers or Biscoff Crackers
whipped cream
