Pork Salsa Verde Tacos

Ingredients

2 pounds pork shoulder, cubed – 1"

1 tablespoon salt

½ tablespoon black pepper

1 tablespoon flour

1 cup cilantro, chopped

1 pound tomatillo, husk removed

3 cloves garlic

1 yellow onion (small)

1 jalapeño

1 tablespoon salt

½ tablespoon black pepper

1 dozen corn tortillas

Directions

Heat sauté pan to medium-high heat. Season pork with salt and pepper and then dust with flour. Working in batches, brown each piece on all sides until all pork has been seared. Heat a medium stock pot with water at medium high heat, place tomatillos and boil until tender but skin is not pierced. Remove from heat and drain. Place boiled tomatillo, cilantro, garlic, onion and jalapeno into blender until it becomes a puree. Turn on crock pot, place seared pork and tomatillo mixture into pan and cook for 4-5 hours. When ready to serve, warm tortillas, add pork salsa verde and garnish with chopped cilantro and diced onions.
