Thai Chicken Pizza

  • ½ portion of this thin crust pizza dough (recipe link below)
  • 1 Tbsp cooking oil
  • 2 cloves garlic, minced
  • 1 chicken breast, cut into chunks
  • salt
  • pepper
  • ¼ cup diced onion
  • ¼ cup spicy peanut sauce (recipe link below)
  • 6 stalks asparagus, sliced diagonally into 2 inch pieces
  • ⅓ cup shredded mozzarella
  • 3 Tbsp chopped cilantro
  1. Preheat oven to 500 degrees
  2. Roll out thin crust pizza dough and transfer to a 10-inch cast iron pan or some pizza baking stone. Spread with spicy peanut sauce.
  3. In a saute pan, heat 1 tbsp cooking oil on medium heat. Brown chicken breast chunks on all sides, and then saute with garlic and onion.
  4. Spread sauteed chicken and onions evenly onto pizza. Top with asparagus and shredded mozzarella.
  5. Reduce oven to 450 degrees and bake for 15 min until crust is browned and cheese is bubbly.
  6. Serve topped with chopped cilantro.
